If you are talking about signatures you can create a signature by going to Preferences -> Signatures, after you have created one (or more) signature make sure you set it as the default signature on the Accounts page so that it will automatically be put onto your messages.
If you are simply talking about styling your text in the message you should see a bar at the top of the compose window that allows you to change many styling options such as text color and background color. |
