When you create an account in Zimbra Desktop and hit the Validate & Save button you'll see the message you've posted above 'Invalid or untrusted....etc.'. At the bottom of that screen is the Validate & Save button, click on that to permanently accept the certificate in ZD.

They will have to install a certificate from a recognised authority, most of them cost money but there are some free providers around (usually free certificates are for individuals) you'd need to do a search on the internet for them.
