I created a bug report for the convenience of the users here: Bug 38846 – Need compatibility with Active Sync in Documents to Go for Exchange (iPhone)
Please note that this is in regards to a third party application, not with the functionality of Zimbra or the iPhone so there might be a question of liability/responsibility. I suggest also notifying Dataviz, and asking them for more sync options: IMAP, WebDAV, etc...
