There's no way to do this, you require a DNS server on the LAN so that Postfix can do a DNS lookup and resolve it's own LAN IP address - no way around it I'm afraid. The set-up for DNS in the Ubuntu article should be fairly easy to follow or use Webmin to do the config as you can edit the files using that.

You don't have to have a separate server running DNS, it can be on the Zimbra server as shown in most of the wiki articles. That's done for convenience (and that DNS server is used only by the Zimbra server) and for users that don't want it on a second server although you can, obviously, have a DNS server located anywhere you like on the LAN.
