Mail servers are heavy users of IO, CPU, and MEM. VM's will degrade the machines IO, CPU, and MEM. So the short answer is that any mail server you run on a VM will be slower. By how much is hard to say. If you've got a newer beefy machine and you don't expect to be fully loaded resource wise then a VM may be ok.
