sure. in fact you could have /backup as a nfs share, although backing up directly to a nfs share can be pretty slow. i have my setup so that my full backup runs on friday and backs up to a local drive, then a script moves that backup to a nfs share.

ldap should be first, after that I don't think it really matters. I don't think you can easily condense a multiserver backup into a single server restore if thats what you're thinking. the upgrade path for multiserver says do ldap -> mta -> mailbox so you might want to follow that.
